Technological Accomplishments during Ancient Years

The production procedure of the olive oil involves extraction of a selected product which exists in the fruit. Typically, it is divided into three stages:

• The crushing*
• The pressing*
• The separation of oil from water

The production of olive oil: The other side of the Story and Technology.

It is likely the first agriculture machines were made for the production of olive oil. Indeed the oil production is characterised by the fact that only mechanical means were used in it. It is about the extraction of a product, which is already in the fruit. Chemical procedures for its production are not necessary as it is with the fermentation of wine. Therefore nobody is surprised if the archaeologists, who are working lately in oil producing areas (Middle East, Crete), identify certain dents and paddles from Copper Age with appliances for the olive oil production. (Eitam,1987. Blitzer,1992). The procedure to convert of olives into olive oil consists of three stages:

• The crushing of the fruit
• The compression of the pulp
• The separation of oil from water and the dregs of olive.
