The Harvest
The harvesting of the fruit can be done in the following ways:
- Following a natural fall
- Beating with a stick
- With machines
No modern method can replace the human hand, which gives the oil – press selected fruit, which in turn produces virgin olive oil full of flavour.
Every producing oil-area used to show its power with number of the oil – presses it had. Multiple oil presses automatically meant rich harvests, competition, increased economy for the local community.
With the development of technology, the oil presses have passed from old technology to new technology, which are called two-phased. The two – phased oil - presses protect our health since they operate with procedures friendly to the environment.
