The olive is tightly connected with the traditions of the Mediterranean people. It has been cultivated over 4500 years in the eastern part of the Mediterranean.
Our forefathers used olive oil as we do: as an irreplaceable food.
The olive was a symbol of wisdom, abundance and strength.
The harvesting of the olive tree begins in the autumn. In some areas it continues until the beginning of the New Year. It is a whole ceremony, a celebration!
Olive oil is a live product which needs special attention so that the quality and the taste will be the best possible. Great care is needed at every stage of its life from the olive grove to the final consumer.
Even today, in many areas, the olives are collected by hand, i.e., they are cut before they fall to the ground. In other areas, the traditional way has been replaced by beating the branches with a stick. When the fruit falls to the ground, careful selection is made of those which will be sent to the oil - press. The welcoming of the new crop is a moment of nature’s reward in exchange for human care.
